This year, I am determined to have some English traditions for Christmas, as we are staying in Minnesota and having a quiet celebration. So, I embarked on what has become a very expensive quest to bake a Christmas cake. For the uninitiated, this is a traditional English fruitcake, laced with brandy, and covered with marzipan and icing. So, first I needed a scale, because English recipes measure ingredients in weight and Americans measure using cups. I also needed a cake pan, because I don't bake much, so off to the cooking store. With cake made successfully, I set off again to the food shop in search of marzipan and icing, which is on every shelf in England this time of year, but not over here. I eventually found them, but at extortionate prices! Anyway, here are the finished pictures - looking forward to eating it over Christmas.
